Five Spice Salt & Pepper Chicken Wings 五香椒盐鸡翼/鸡翅 [免油炸 Ninja Foodi Air Fryer Recipe]

This is a simple fried chicken wings recipe without deep-frying in oil. These delicious chicken wings are easy to cook if you have a Ninja Foodi at home. The Ninja Foodi cooks the food with a delicious golden crisp finish, works like the real deep-fryer minus the oil and mess of the deep-frying process. These wings are flavourful juicy inside! If you love deep-fried food but hate the process of deep-frying, this is the machine that you’d need. 

The Ninja Foodi multi-cooker that I’m using is a combination of a pressure cooker and air fryer in one pot, it’s super-efficient and time-saving. The heat distribution is even and it heats up real fast compared to my other air fryer. The deep pot could prevent oil/ residues splatter all over the crisping lid making it easy to maintain and clean. 
The one in front is my Ninja Foodi OP300 after 6 months of heavy usage, the crisping lid still as good. The one simple step is to wipe it clean with a damp cloth after use. Easy?

Method:
1. Combine marinade ingredients and chicken wings. Cover and let marinate for 2 hours or overnight in the refrigerator.

3. Lightly coat chicken wings with some corn flour. Place the chicken wings (combine with curry leaves, if using) on the Cook & Crisp Basket, Air-Crisp for 12-15 mins or until crisp and golden. Sprinkle some Salt Pepper, serve right away.

Easy Brioche Bread Recipe 布里欧修面包

This is an easy straight dough method, baked without an oven. Had a baking session with my kid, so everything got to be simplified and fun. We made these using Ninja Intellisense System processor to knead the dough, then baked in the Ninja Foodi. We also cooked burger patties and eggs in the Ninja Foodi so that the boy can assemble the burgers on the induction stove… Yeah, ever since I’ve got my Ninja Foodi, I hardly use my induction stovetop for cooking. 😛

Method:
1. Mix milk and yeast, let it sit for 15 minutes. Add in all the ingredients (except butter) into Ninja Intellisense Processor (use the dough hook). Select DOUGH mode, process to form a dough. Add in butter, continue kneading the dough to form a smooth elastic dough.

This is one of our regular home-cooked soups, the main ingredient is shark’s fin melon that resembling shark’s fin as it’s cooked. Since Chinese New Year is nearing, I thought it’d be a great time to share this delicious and nutritious shark’s-fin-free soup recipe so that you guys can cook for your family. 3. Add salt and white pepper to taste, shred some chicken meat from the chicken carcass, discard chicken bones, serve warm. 

Note: If you’re like me who loves the “thicker” kind of 老火汤 soup, after pressure cook, switch to Sear/ Saute (HI) mode, add some salt to taste. Let it boil for 5-10 minutes. Add a dash of white pepper and serve.

Radish Cake aka Lo Bak Go 萝卜糕 [Ninja Foodi/Pressure Cooker Recipe]




This is a Lunar New Year staple because the word for radish (菜头, chhài-thâu) is a homophone for “good fortune” (好彩头, hó-chhái-thâu) in Hokkien language, older generation used to make and giveaway to relatives and friends. In Singapore and Malaysia, we hardly call this Turnip/ Radish Cake, it’s more commonly known as Carrot Cake aka Lo Bak Go 萝卜糕 in Cantonese. Usually made by steaming, this time I tried another method using Ninja Foodi Pressure Cook function. Started with Sear/ Saute mode to stir fry the ingredients, then switch to pressure cook. I like this deep pot, it’s easier to stir fry the ingredients in this ceramic-coated pot which is non-stick, I can use very little oil for stir-frying..

30g chopped Dried Shrimps, rehydrated 

1 small Chinese Sausage, diced

25g Wheat Starch

Squeeze out excess water and set aside. Sieve flour, salt and white pepper, set aside.

2. Use Ninja Foodi Sear/ Saute(HI) mode, heat some oil in the inner pot. Add in dried shrimps, mushroom and Chinese sausage, stir fry till fragrant. Set aside.









3. Add in shredded radish, stir fry for a minute or so. Add in 100g chicken broth and sifted flour. Gradually stir in chicken broth till the mixture is thick and pliable. Stir in dried shrimps and Chinese sausage. Transfer to a 6″ cake pan.

5. When it’s done, remove the cake pan from the pot. Let it cooled completely on the rack, about 2-3 hours for the radish cake to set. Cream Cracker Meatball 梳打饼炸肉丸【免油炸 Ninja Foodi Air Fryer Recipe】

Almost every kid loves meatballs but not all the kids love veggies. One of the reasons I’d make meatballs for my kid it’s that I could hide veggies in the meatballs such as carrots, peas and other chopped veggies. This is a very simple kid-friendly meatball recipe, added shredded carrots, easy to make without deep-frying in oil. Air-fry using my trusty Ninja Foodi to crisps-up the meatballs quickly without drying up the meat, these meatballs are cooked perfectly, slightly crisp on the outside and juicy inside.

The Ninja Foodi multi-cooker that I’m using is a combination of a pressure cooker and air fryer in one pot, it’s super-efficient and time-saving. The heat distribution is even and it heats up real fast compared to my other air fryer. The deep pot could prevent oil/ residues splatter all over the crisping lid making it easy to maintain and clean. 
The one in front is my Ninja Foodi OP300 after 6 months of heavy usage, the crisping lid still as good. The one simple step is to wipe it clean with a damp cloth after use. Easy?

Homemade Nian Gao/ Tikoy/ Kuih Bakul 自制年糕【传统年糕+快速版】

Nian Gao, translated as Chinese New Year Cake is a kind of sweet sticky rice cake prepared from glutinous rice flour, sugar, and water. Traditionally it is most popular eaten during Chinese New Year. It is considered good luck to eat Nian Gao during this festive season as Chinese believed eating Nian Gao has the symbolism of raising oneself taller, higher, or wealthier in each coming year. 

I love Nian Gao, especially the homemade less-sweet version. There’re two easy methods to make Nian Gao at home. A modern quick version using a pressure cooker and traditional long hours steaming using a slow cooker. Both methods can be done using the Ninja Foodi OP300. Method: 

1. Blanch the banana leaves in hot water, pat dry with kitchen towel and line the ramekins. 


Traditional Nian Gao:
Mix all ingredients until the sugar has fully dissolved, pour through a strainer.

Pressure Cook Nian Gao: 
Heat water and sugar till full dissolved, let it cool. Mix the syrup with glutinous rice flour, pour through a strainer.







2.  Pour the mixture into the lined ramekin, cover with aluminum foil, place reversible rack in the Ninja Foodi inner pot. Add in hot water, 6 cups level (slow cook), 4 cups level (pressure cook).

3. Close the pressure lid.  


Pressure Cook method: SEAL. Select Pressure Cook (HI), set 40 mins cook-time.

Slow Cook method: VENT. Select Slow Cook (HI), set 12 hours cook-time. Reset the timer and continue cooking for another 4 hours. 


I’ve tested the Ninja Foodi Slow Cook power consumption. The power consumption is low, it’s ok to use the slow cook mode to cook for long hours, you don’t need to worry about your electricity bill. 😀 
Note: This traditional Nian Gao is a less sweet recipe. Feel free to add more sugar if you like it sweeter, the color and aroma would be better if added more sugar and cook longer. Previously when I did it at my mom’s place, we slow cook Nian Gao for 22 hours to make dark brown color Nian Gao. If you’ve time, you can give it a try!

Salted Egg Yolk Squid/ Sotong 咸蛋黄苏东【免油炸 Ninja Foodi Air Fryer Recipe】

A quick and easy Fried Squid aka Sotong, coated with creamy salted egg yolk sauce. This is a simplified recipe without deep-frying in oil. Steaming, air-frying and stir-frying, all done in one pot. 

~ Use STEAM mode to steam the salted egg yolk.
~ Use AirCrisp mode to air-fried the squid with minimal oil used.
~ Use Saute/ Sear mode to cook the sauce.

3. Place the squid on the Cook & Crisp Basket, Air-Crisp for 6 mins or until crisp and golden. Remove the Cook & Crisp Basket from the pot. 



4. Switch to Saute/ Sear mode, heat butter and salted egg yolk till foamy. Stir in curry leaves and chili. 



5. Turn off heat. Season with sugar and salt, stir in squid quickly and serve right away.

Note: Spray some oil on the Cook & Crisp basket and squid before air-frying. I used slightly chilled squid, crisps-up using high-temperature 210’C. This way, the squids would be tender and nice.

Peranakan Babi Pongteh/ Nyonya Pork Stew 娘惹豆酱焖猪肉 [Pressure Cooker Recipe]


Babi Pongteh is a Peranakan pork stew flavored with fermented bean paste, added gula Melaka for the sweetness and aroma. This dish required at least 2 hours of slow cooking over the stove to tenderize the meat. In this blog post, I’m sharing a simplified recipe using Ninja Food, cooked in a much shorter time, without deep-frying.



~ Starts with air-fry the potatoes with minimal oil, this is easier and healthier compared to deep-frying the potatoes. 
~ In the same pot, use Saute mode to stir-fry the ingredients.
~ Pressure cook the pork together with rice for 10 minutes. 

It’s so quick and easy cooking everything in the same pot. After cooking, just wash one pot and all the cleaning is complete!

70g Shallots, minced

1 tbsp Oyster Sauce

1 tsp Dark Soy Sauce

1/2 tbsp Light Soy Sauce

Optional: 1/4 tsp Salt or adjust to taste

Method：

2. Lightly coat potatoes with some oil, cook using Ninja Foodi AirCrisp mode 210’C for 6 minutes. Remove the potatoes from the pot, set aside. 


3. Select Sear/Saute mode, heat some oil, fry the shallot and garlic till fragrant, stir in fermented soybean paste, add in mushroom and pork, stir fry until half-cooked, add in potatoes and cinnamon, continue to stir fry for a minute.



4. Add in the rest of the ingredients. Top up some water to 4 cups level.


5. If cooking with rice, use the reversible rack and place the rice on top. Rice and water ratio is 2:3.

12 Chicken Mid Wings
1 Egg Yolk
1-2 tbsp Corn Flour
Marinade:
2 tsp Curry Powder
1 tbsp Corn Flour
1 tsp Salt
1/4 tsp White Pepper
2 tsp Light Soy Sauce
1 tsp Sesame Oil
1/2 tsp Onion Powder

Method:
1. Mix all marinade ingredients in a bowl. Add in chicken wings, mix well. Cover and let marinate overnight in the refrigerator.
2. Stir in egg yolk and mix in some corn flour to the chicken wings to form a thin layer of coating. Preheat Ninja Foodi Air-Crisp mode 200’C for 3mins.

3. Place the chicken wings on the Cook & Crisp Basket, Air-Crisp for 10-12 mins or until crisp and golden. 

Note: Spray some oil on the Cook & Crisp basket before air-frying. If you’re cooking more chicken wings at a time, flip the wings once half-way cooking.
