Easy Brioche Bread Recipe 布里欧修面包

This is an easy straight dough method, baked without an oven. Had a baking session with my kid, so everything got to be simplified and fun. We made these using Ninja Intellisense System processor to knead the dough, then baked in the Ninja Foodi. We also cooked burger patties and eggs in the Ninja Foodi so that the boy can assemble the burgers on the induction stove… Yeah, ever since I’ve got my Ninja Foodi, I hardly use my induction stovetop for cooking. 😛

The Ninja Foodi multi-cooker that I’m using is a combination of a pressure cooker and air fryer in one pot, it’s super-efficient and time-saving. The heat distribution is even and it heats up real fast compared to an oven. The deep pot could prevent oil/ residues splatter all over the crisping lid making it easy to maintain and clean. 
The one in front is my Ninja Foodi OP300 after 6 months of heavy usage, the crisping lid still as good. The one simple step is to wipe it clean with a damp cloth after use. Easy? 
The one at the back is a new unit. 😀  

Besides pressure cook and air frying, there are other functions such as steam, slow cook, sear/ saute, bake/ roast, grill, and keep warm. I also use it for stir-frying dishes with 5 adjustable heat levels. 140g Lukewarm Milk


1/2 tbsp Instant Yeast

Method:
1. Mix milk and yeast, let it sit for 15 minutes. Add in all the ingredients (except butter) into Ninja Intellisense Processor (use the dough hook). Select DOUGH mode, process to form a dough. Add in butter, continue kneading the dough to form a smooth elastic dough. 


👉 If you do not have a blender, you can knead the dough in a stand mixer or bread maker. You can also consider getting a Ninja Intellisense System. 2. Transfer the dough onto a greased bowl, cover with cling wrap and let it proof doubled in size. About an hour.



3. Deflate and divide the dough. Cover and let it rest for 10 minutes. Shape the dough as desired. Proof double in size.

Radish Cake aka Lo Bak Go 萝卜糕 [Ninja Foodi/Pressure Cooker Recipe]




This is a Lunar New Year staple because the word for radish (菜头, chhài-thâu) is a homophone for “good fortune” (好彩头, hó-chhái-thâu) in Hokkien language, older generation used to make and giveaway to relatives and friends. In Singapore and Malaysia, we hardly call this Turnip/ Radish Cake, it’s more commonly known as Carrot Cake aka Lo Bak Go 萝卜糕 in Cantonese. Usually made by steaming, this time I tried another method using Ninja Foodi Pressure Cook function. Started with Sear/ Saute mode to stir fry the ingredients, then switch to pressure cook. I like this deep pot, it’s easier to stir fry the ingredients in this ceramic-coated pot which is non-stick, I can use very little oil for stir-frying..

Make 1x 6″ cake

500g White Radish/ Daikon/ Turnip

30g chopped Dried Shrimps, rehydrated 

1 small Chinese Sausage, diced

3 Dried Shiitake Mushroom, soaked and reserved *water.

25g Wheat Starch 

100g Rice Flour 

250g – 300g Chicken Broth + *mushroom water, adjust the amount accordingly. 

About 1/2 tsp – 3/4 tsp Salt, adjust to taste

1/4 tsp White Pepper 

Some shallot oil to grease the cake pan

Some chopped spring onion, chilies and fried shallots for garnishing.

2. Use Ninja Foodi Sear/ Saute(HI) mode, heat some oil in the inner pot. Add in dried shrimps, mushroom and Chinese sausage, stir fry till fragrant. Set aside.









3. Add in shredded radish, stir fry for a minute or so. Add in 100g chicken broth and sifted flour. Gradually stir in chicken broth till the mixture is thick and pliable. Stir in dried shrimps and Chinese sausage. Transfer to a 6″ cake pan.

5. When it’s done, remove the cake pan from the pot. Let it cooled completely on the rack, about 2-3 hours for the radish cake to set. Garnish with spring onion, chilies and fried shallot before serving. You may store the turnip cake in the refrigerator to serve later. Slice and Air-Crisp in the Ninja Foodi before serve. Taste superb!

Black Sesame Glutinous Rice Ball aka Tang Yuan 黑芝麻馅汤圆食谱

Homemade Black Sesame Glutinous Rice Ball aka Tang Yuan. The texture of these Tang Yuan is springy and soft, filled with homemade black sesame fillings, simply delectable!


Ingredients: 
材料

Dough 面团:

100g Glutinous Rice Flour 糯米粉 100克

30g Hot Boiling Water 热水 30克

40g Cold Water 冷水 40克



Black Sesame Fillings 黑芝麻馅:

80g Toasted Black Sesame Seeds 炒香黑芝麻 80克

85g Castor Sugar 细砂糖 85克

30g Salted Butter or Lard, add more if prefer runny paste 含盐牛油/猪油 30克

2. Divide the paste, roll into small balls. Cover and chill in the fridge for 30 minutes. 
将黑芝麻馅分成小球状。盖好,放进冰箱冷藏30分钟。






3. Prepare the dough: Mix glutinous rice flour and hot boiling water with a spatula. Gradually add in cold water and knead with hand to form a dough. 
面团:糯米粉加入热水,用刮刀稍微搅拌。慢慢加入冷水,用手揉成面团。

4. Divide dough, wrap in fillings.
分割面团,包入馅料。



5. Boil a pot of water, add in glutinous rice balls, cook until they float up. Cook for another minute. Transfer the dough to a bowl of water (room temperature), drain and serve with your favorite syrup.
