Five Spice Salt & Pepper Chicken Wings 五香椒盐鸡翼/鸡翅 [免油炸 Ninja Foodi Air Fryer Recipe]

This is a simple fried chicken wings recipe without deep-frying in oil. These delicious chicken wings are easy to cook if you have a Ninja Foodi at home. The Ninja Foodi cooks the food with a delicious golden crisp finish, works like the real deep-fryer minus the oil and mess of the deep-frying process. These wings are flavourful juicy inside! If you love deep-fried food but hate the process of deep-frying, this is the machine that you’d need. 

The Ninja Foodi multi-cooker that I’m using is a combination of a pressure cooker and air fryer in one pot, it’s super-efficient and time-saving. The heat distribution is even and it heats up real fast compared to my other air fryer. The deep pot could prevent oil/ residues splatter all over the crisping lid making it easy to maintain and clean. 
The one in front is my Ninja Foodi OP300 after 6 months of heavy usage, the crisping lid still as good. The one simple step is to wipe it clean with a damp cloth after use. Easy?

Method:
1. Combine marinade ingredients and chicken wings. Cover and let marinate for 2 hours or overnight in the refrigerator.

Shark’s Fin Melon Chicken Soup 鱼翅瓜鸡丝汤 – 营养丰富，清心止渴

This is one of our regular home-cooked soups, the main ingredient is shark’s fin melon that resembling shark’s fin as it’s cooked. Since Chinese New Year is nearing, I thought it’d be a great time to share this delicious and nutritious shark’s-fin-free soup recipe so that you guys can cook for your family. Say NO to the real shark’s fin!

1 Kampong Chicken Carcass (skinless with some chicken breast meat, blanched)

Method:

2. Close the pressure lid, SEAL. Pressure cook (HI) for 10 minutes. Natural pressure release 10minutes. 



3. Add salt and white pepper to taste, shred some chicken meat from the chicken carcass, discard chicken bones, serve warm. 

Note: If you’re like me who loves the “thicker” kind of 老火汤 soup, after pressure cook, switch to Sear/ Saute (HI) mode, add some salt to taste. Let it boil for 5-10 minutes. Add a dash of white pepper and serve.

Cream Cracker Meatball 梳打饼炸肉丸【免油炸 Ninja Foodi Air Fryer Recipe】

Almost every kid loves meatballs but not all the kids love veggies. One of the reasons I’d make meatballs for my kid it’s that I could hide veggies in the meatballs such as carrots, peas and other chopped veggies. This is a very simple kid-friendly meatball recipe, added shredded carrots, easy to make without deep-frying in oil. Air-fry using my trusty Ninja Foodi to crisps-up the meatballs quickly without drying up the meat, these meatballs are cooked perfectly, slightly crisp on the outside and juicy inside.

Salted Egg Yolk Squid/ Sotong 咸蛋黄苏东【免油炸 Ninja Foodi Air Fryer Recipe】

A quick and easy Fried Squid aka Sotong, coated with creamy salted egg yolk sauce. This is a simplified recipe without deep-frying in oil. Steaming, air-frying and stir-frying, all done in one pot. 

~ Use STEAM mode to steam the salted egg yolk.
~ Use AirCrisp mode to air-fried the squid with minimal oil used.
~ Use Saute/ Sear mode to cook the sauce. 

These Air Crisp squid taste as good as the deep-fried version, minus the oil in the food and your kitchen floor 😉

2. Stir in flour and egg into the squid to form a thick paste. Adjust the amount of flour and egg if needed. Preheat Ninja Foodi AirCrisp mode 210’C 3mins.

3. Place the squid on the Cook & Crisp Basket, Air-Crisp for 6 mins or until crisp and golden. Remove the Cook & Crisp Basket from the pot. 



4. Switch to Saute/ Sear mode, heat butter and salted egg yolk till foamy. Stir in curry leaves and chili. 



5. Turn off heat. Season with sugar and salt, stir in squid quickly and serve right away.

Note: Spray some oil on the Cook & Crisp basket and squid before air-frying. I used slightly chilled squid, crisps-up using high-temperature 210’C. This way, the squids would be tender and nice.

Peranakan Babi Pongteh/ Nyonya Pork Stew 娘惹豆酱焖猪肉 [Pressure Cooker Recipe]


Babi Pongteh is a Peranakan pork stew flavored with fermented bean paste, added gula Melaka for the sweetness and aroma. This dish required at least 2 hours of slow cooking over the stove to tenderize the meat. In this blog post, I’m sharing a simplified recipe using Ninja Food, cooked in a much shorter time, without deep-frying.

Marinade:

1 tbsp Tapioca Flour

1 tbsp Light Soy Sauce

1 tsp Sesame Oil

200g Potatoes

70g Shallots, minced

25g Garlic, minced

1 Cinnamon Stick

30g Fermented Soy Bean Paste (salted or spicy)

15g Palm Sugar/ Gula Melaka

1 tbsp Oyster Sauce

1 tsp Dark Soy Sauce

1/2 tbsp Light Soy Sauce

Optional: 1/4 tsp Salt or adjust to taste

Method：

1. Combine the pork with the marinade ingredients, let marinate overnight in the fridge.




2. Lightly coat potatoes with some oil, cook using Ninja Foodi AirCrisp mode 210’C for 6 minutes. Remove the potatoes from the pot, set aside. 


3. Select Sear/Saute mode, heat some oil, fry the shallot and garlic till fragrant, stir in fermented soybean paste, add in mushroom and pork, stir fry until half-cooked, add in potatoes and cinnamon, continue to stir fry for a minute.



4. Add in the rest of the ingredients. Top up some water to 4 cups level.


5. If cooking with rice, use the reversible rack and place the rice on top. Rice and water ratio is 2:3.

Air Fried Curry Chicken Wings 咖喱粉炸鸡翼【免油炸 Ninja Foodi Recipe】

Crispy and tasty curry flavored fried chicken, a very simple kid-friendly recipe without the need to deep-fry the wings in oil. Fried chicken wings are easy to cook if you have a Ninja Foodi at home. The Ninja Foodi cooks the food with a delicious golden crisp finish, works like the real deep-fryer minus the oil and mess of the deep-frying process. These wings are crispy on the outside and juicy inside! If you love deep-fried food but hate the process of deep-frying, this is the machine that you’d need. 

The Ninja Foodi multi-cooker that I’m using is a combination of a pressure cooker and air fryer in one pot, it’s super-efficient and time-saving. The heat distribution is even and it heats up real fast compared to my other air fryer. The deep pot could prevent oil/ residues splatter all over the crisping lid making it easy to maintain and clean.

Chinese Stir-Fry Glutinous Rice 古早味糯米饭【快速简易版 Pressure Cooker Recipe】

This is a simplified recipe that I’ve modified from the classic stir-fry glutinous rice that required a longer stir-frying time. Ever since I’ve got my Ninja Foodi multi-cooker, I’ve cooked almost everything using this wonder-pot. Recently I’ve tried cooking glutinous rice and I’m so happy that it turned out perfect with the easier method and shorter cooking time! 


The Ninja Foodi that I’m using is a combination of a pressure cooker and air fryer in one appliance, it’s super-efficient and time-saving. I used the Sear/ Saute mode to stir-fry the ingredients, pressure cook mode to quickly cook the glutinous rice. 100g Pork Belly, sliced/ diced

1 small Chinese Sausage, diced

1.5 tsp Shao Xing Hua Tiao Wine

1/2 tsp Salt

1/2 tsp Fish Sauce

1/2 tsp Castor Sugar

1 tsp Sesame Oil

1/8 tsp White Pepper

Method:

1. In a bowl, mix all seasoning ingredients and water, set aside. Set Ninja Foodi Sear/ Saute mode （HI）. Heat some oil in the inner pot, stir fry Chinese sausage till crisp, remove from the pot, set aside.



2. Use the remaining oil, stir fry shallots and garlic till fragrant. Stir fry pork belly till cooked, add in scallops and mushrooms, followed by glutinous rice, stir fry thoroughly. 



3. Gradually stir in seasoning mixture. Add in Chinese sausage, close the pressure lid, sealed.



4. Beef Stew With Tendon & Daikon 柱候萝卜焖牛肉、筋 [Pressure Cooker Recipe – Ninja Foodi]


This is a classic HK beef stew with tendon and daikon, cooked easily in my trusty Ninja Foodi multi-cooker using the Pressure Cook function to speed up the cooking process to tenderize the meat. 

This is a simplified recipe, merely 45 minutes cooking time that tastes like it’s been slow-cooked for 3-4 hours, with perfectly tender and succulent beef infused in rich flavourful gravy. I’m using Ninja Foodi multi-cooker that comes with a 6L deep pot, with the reversible rack I’m able to create an extra tier to cook the rice together with the beef stew. I started with 30 mins pressure cook beef, then add the rice, tendon, and daikon, continue cooking for 15 minutes. And I have my beef stew and rice ready at the same time without the need of cooking rice in a separate rice cooker.

Method:

1. Combine beef with potato starch and sesame oil, cover and leave it overnight in the refrigerator. 

2. Set Ninja Foodi Saute/Sear mode MD/HI, heat some oil and saute ginger, shallot, star anise, and garlic till fragrant, gently stir-fry the beef to lock the moisture. 

3. Stir in garlic pepper and rock sugar, followed by rice wine and the rest of the sauce ingredients. Close the pressure lid, seal the valve. Set Pressure Cook (HI) 30 minutes. When the cooking is done, quick-release pressure. Add tendon and daikon. If you’re cooking rice, place the reversible rack and rice in the pot as shown in the pictures above. Continue with 15 minutes of pressure cook on high.  

5. When the cooking is done, natural pressure release 15 minutes, it’s ready to serve. If you prefer a thicker gravy, set Saute/Sear mode to thicken the gravy.
