Shark’s Fin Melon Chicken Soup 鱼翅瓜鸡丝汤 – 营养丰富,清心止渴

This is one of our regular home-cooked soups, the main ingredient is shark’s fin melon that resembling shark’s fin as it’s cooked. Since Chinese New Year is nearing, I thought it’d be a great time to share this delicious and nutritious shark’s-fin-free soup recipe so that you guys can cook for your family. Say NO to the real shark’s fin!

1 thick slice Shark’s Fin Melon, peeled and cut into chunks.

1 Carrot, peeled and cut into chunks

1 Kampong Chicken Carcass (skinless with some chicken breast meat, blanched)

5 Red Dates

3-4 Dried Scallops (soaked and reserve the water)
2 slices Ginger

Hot Water

Some Salt and White Pepper (add to taste)

Method:
1. Place all ingredients (except salt and pepper) into Ninja Foodi inner pot. Add in hot water to 7 cups level.

2. Close the pressure lid, SEAL. Pressure cook (HI) for 10 minutes. Natural pressure release 10minutes. 



3. Add salt and white pepper to taste, shred some chicken meat from the chicken carcass, discard chicken bones, serve warm. 

Note: If you’re like me who loves the “thicker” kind of 老火汤 soup, after pressure cook, switch to Sear/ Saute (HI) mode, add some salt to taste. Let it boil for 5-10 minutes. Add a dash of white pepper and serve.

Black Sesame Glutinous Rice Ball aka Tang Yuan 黑芝麻馅汤圆食谱

Homemade Black Sesame Glutinous Rice Ball aka Tang Yuan. The texture of these Tang Yuan is springy and soft, filled with homemade black sesame fillings, simply delectable!


Ingredients: 
材料

Dough 面团:

100g Glutinous Rice Flour 糯米粉 100克

30g Hot Boiling Water 热水 30克

40g Cold Water 冷水 40克



Black Sesame Fillings 黑芝麻馅:

80g Toasted Black Sesame Seeds 炒香黑芝麻 80克

85g Castor Sugar 细砂糖 85克

30g Salted Butter or Lard, add more if prefer runny paste 含盐牛油/猪油 30克

1. Process toasted black sesame seeds and sugar in a blender, stir in butter/ lard to form a thick paste.

2. Divide the paste, roll into small balls. Cover and chill in the fridge for 30 minutes. 
将黑芝麻馅分成小球状。盖好,放进冰箱冷藏30分钟。






3. Prepare the dough: Mix glutinous rice flour and hot boiling water with a spatula. Gradually add in cold water and knead with hand to form a dough. 
面团:糯米粉加入热水,用刮刀稍微搅拌。慢慢加入冷水,用手揉成面团。

4. Divide dough, wrap in fillings.
分割面团,包入馅料。



5. Boil a pot of water, add in glutinous rice balls, cook until they float up. Cook for another minute. Transfer the dough to a bowl of water (room temperature), drain and serve with your favorite syrup.

Ginseng Chicken Soup [Samgye-tang] 人参鸡汤


This nourishing and nutritious Ginseng Chicken Soup is not just delicious, it is easy to make and good for health. I’m trying out Song Cho Claypot Rice Cooker – soup mode, the default cooking time is 2 hours, slowly simmer the soup for great flavor! 

Ingredients:

1 small Chicken (700g)

2 tsp Salt

1 tbsp Chinese Rice Wine

(A)

6 cloves Garlic

3 tbsp Glutinous Rice, soaked for 1 hour, drained

1 Ginseng/ Korean Ginseng 

1-2 Dried Scallops

6 Red Dates

~~~~~~~~~~~~~~~~~~~~~

Some hot water

Some Salt & White Pepper, add to taste

Some Spring Onion for garnishing

Method:

1. Rub chicken with salt and rice wine, set aside for 30 minutes. Wipe off the excess liquid.



2. Stuff the chicken with ingredients (A), place the chicken into the inner pot, add water till 80% full.


3. Cover with double lids, set mode, the default cooking time is 2 hours.



4. After 1.5 hours, add salt to taste. 

5. When the cooking is completed, add some white pepper. Garnish with spring onion, serve warm.

Cute Bear Fishball Seafood Noodle Soup 汤面

Scorching hot day… 小熊被太阳晒到眼睛都开不到了。。🥵

Cooked this Seafood Noodle Soup🍜 for the kid. I prepared the seafood stock in the morning, reheat and add fish slices, spinach and noodles before serving. While heating the soup, air-fry fishball using Ninja Foodi for few minutes…
